The Tamarind is a seasonal fruit found during the months of December and January. The fruit is a small, brittle brown pod that contains several large seeds that are covered with a stick, pulpy interior. When unripe or "green", the pulp is acidic and can be used to season meat or fish in place of lemons and limes. When ripe, some of the fruit tend to be sweet but others can still be unbearably sour.
